Ingredients
  

  • 4 medium jalapeños stems removed, sliced in half, and seeded
  • 1 tablespoon olive oil
  • 4 ounces cream cheese room temperature
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 cup mild cheddar cheese (113 g) shredded, divided
  • 6 strips bacon cooked, divided
  • 4 slices Texas toast (or your bread of choice)
  • 4 tablespoons unsalted butter divided

Method
 

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper for easy cleanup.
  2. Brush the jalapeños with olive oil on all sides and place them on the prepared baking sheet.

  3. Roast the peppers for about 15 minutes, or until the skins begin to char slightly. Remove them from the oven and let them cool.
  4. In a medium mixing bowl, combine the room-temperature cream cheese, garlic salt, black pepper, and onion powder. Mix until the texture is smooth and creamy.

  5. Once the roasted jalapeños are cool enough to handle, roughly chop them and fold them into the cream cheese mixture.
  6. Butter one side of a slice of bread. On the opposite side, spread half of the cream cheese and jalapeño mixture.

  7. Top the cream cheese mixture with 3 slices of bacon and ½ cup of shredded cheddar cheese.

  8. Place another slice of bread on top and butter the outside. Repeat these steps for the second sandwich.
  9. Add the buttered sandwich to a skillet over medium heat. Cook both sides until the bread is golden brown and the cheese is completely melted, which usually takes 3 to 5 minutes per side.
  10. Serve your Roasted Jalapeno Popper Grilled Cheese immediately while hot and melty.

Notes

Use room-temperature cream cheese to ensure the mixture spreads smoothly without tearing the bread. Cook the sandwiches over medium heat to allow the cheddar to melt thoroughly without burning the toast.
