Raspberry Brownie Parfaits

Quick to assemble and bursting with rich chocolate and sweet raspberry flavors, these parfaits are a decadent yet surprisingly wholesome dessert.

Ingredients
  

Brownie Layer
  • 1 package brownie mix (about 18 oz) of your favorite brownie mix
  • Ingredients as directed for the brownie mix (usually eggs, oil, water)
Raspberry Layer
  • 2 cups fresh or frozen raspberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
Assembly
  • 1 cup Greek yogurt or whipped cream
  • chocolate shavings or extra raspberries for garnish Optional

  • Individual Glasses or Jars

Method
 

  1. Prepare and bake the brownie mix according to the package directions. Let cool completely, then cut into 1-inch cubes.

  2. In a saucepan, combine the raspberries, honey (or maple syrup), lemon juice, and vanilla extract.
    2 cups fresh or frozen raspberries, 2 tablespoons honey or maple syrup, 1 tablespoon lemon juice, 1/2 teaspoon vanilla extract
  3. Bring the raspberry mixture to a simmer over medium heat. Cook for 5-7 minutes, stirring occasionally, until the raspberries have softened and the sauce has thickened slightly.
    2 cups fresh or frozen raspberries, 2 tablespoons honey or maple syrup, 1 tablespoon lemon juice, 1/2 teaspoon vanilla extract
  4. Remove the raspberry sauce from the heat and let it cool slightly.
  5. In individual glasses or jars, layer brownie cubes, raspberry sauce, and Greek yogurt (or whipped cream). Repeat layers.

  6. Top the Raspberry Brownie Parfaits with chocolate shavings and fresh raspberries (if desired). Serve immediately or chill for later. Enjoy!
