Ingredients

  • 8 ounces cream cheese softened
  • 4 ounces goat cheese softened
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup chopped green onions
  • 1 tablespoon honey
  • 0.25 teaspoon garlic powder
  • 1 pinch salt and pepper
For the Coating:
  • 1 cup fresh pomegranate seeds
  • 0.25 cup chopped pecans or walnuts
  • 2 tablespoons chopped fresh parsley optional

Method
 

  1. In a large bowl, mix together the softened cream cheese, goat cheese, and cheddar cheese until smooth.
  2. Add the green onions, honey, garlic powder, salt, and pepper to the cheese mixture. Mix well to combine all ingredients.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the cheese ball to firm up.
  4. While the cheese mixture is chilling, prepare the coating by combining the pomegranate seeds, chopped nuts, and parsley (if using) in a shallow dish.
  5. Remove the cheese mixture from the refrigerator and shape it into a ball.
  6. Roll the cheese ball in the pomegranate seed and nut mixture, pressing gently to ensure the coating adheres well.
  7. Wrap the Pomegranate Christmas Cheese Ball in plastic wrap and refrigerate for at least another 30 minutes to allow the coating to set.
  8. Serve with crackers, crusty bread, or vegetables of your choice.
