Cook pasta according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water.

While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 30 seconds. Don't let it burn!

Stir in crushed tomatoes, add spinach, and vegetable broth. Bring to a simmer.

Reduce heat and simmer for 5-7 minutes, allowing the flavors to meld.
Add the cooked pasta and Parmesan cheese to the skillet. Toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
