Creamy Queso Rice Steak Strips

Ingredients
  

For the Steak Strips:
  • 1 pound sirloin steak cut into thin strips
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • to taste salt
  • to taste pepper
For the Creamy Queso Sauce:
  • 1 tablespoon butter
  • 1/2 cup diced onion
  • 1 clove garlic minced
  • 1 cup milk
  • 4 ounces cream cheese softened
  • 1 cup shredded queso cheese (Monterey Jack or Oaxaca work well)
  • 1/4 cup chopped cilantro
  • 1 jalapeño seeded and minced (optional)
For the Rice:
  • 2 cups cooked rice (white, brown, or your favorite)

Method
 

  1. In a bowl, combine the steak strips with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well to coat.

  2. Heat a large skillet over medium-high heat. Add the steak strips and cook for 3-5 minutes, or until browned and cooked through. Remove from skillet and set aside.

  3. In the same skillet, melt the butter over medium heat. Add the diced onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.

  4. Pour in the milk and bring to a simmer. Add the softened cream cheese and stir until completely melted and smooth.

  5. Stir in the shredded queso cheese until melted and creamy. Add the chopped cilantro and minced jalapeño (if using). Season with salt and pepper to taste.

  6. Add the cooked steak strips back to the skillet with the queso sauce. Stir to combine and heat through.
