Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
For the Pasta
  • 1 pound fettuccine pasta
  • 8 ounces cream cheese softened
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions for garnish (optional)
  • 1 tablespoon Cajun seasoning or more, to taste
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons butter

Method
 

  1. *Prepare the Chicken:* In a bowl, toss the chicken with olive oil, 1 tablespoon Cajun seasoning, garlic powder, salt, and pepper.

  2. *Cook the Chicken:* Heat a large skillet over medium-high heat. Add the chicken and cook until fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

  3. *Cook the Pasta:* While the chicken is cooking, cook the fettuccine pasta according to the package directions. Drain and set aside.

  4. *Make the Sauce:* In the same skillet, melt the butter. Add the cream cheese and cook until smooth.

  5. *Incorporate the Sauce:* Stir in heavy cream, chicken broth, Parmesan cheese, 1 tablespoon of Cajun seasoning, and garlic powder. Season with salt and pepper to taste. Simmer for 2-3 minutes, stirring occasionally, until the sauce has thickened.
