Ingredients
  

  • 1 head cauliflower medium, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup buffalo sauce store-bought or homemade
  • 1 tbsp unsalted butter melted
  • Cooking spray
  • 2 tbsp olive oil optional for non-battered version

Method
 

  1. Start by removing the leaves and cutting the cauliflower head into bite-sized florets. Try to keep them uniform in size to ensure they cook evenly.

  2. In a large mixing bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper. The consistency should be thick enough to coat the cauliflower but still pourable.

  3. Add the cauliflower pieces to the batter bowl. Toss them gently until every floret is fully coated. Lift them out and shake off any excess batter before moving to the next step.

  4. Preheat your air fryer to 375°F (190°C) for about 3 minutes. Lightly spray the air fryer basket with cooking spray. Place the battered cauliflower in a single layer in the basket, ensuring they are not touching or overcrowded.

  5. Cook for 12 to 15 minutes. Make sure to shake the basket halfway through the cooking time to ensure all sides get golden brown and crispy.
  6. While the cauliflower is air frying, whisk together the buffalo sauce and the melted butter in a small bowl. For a hint of sweetness, you can also stir in a tablespoon of honey.

  7. Once the cauliflower is crispy, transfer it to a clean bowl. Pour the buffalo sauce mixture over the hot florets and toss until evenly coated. For extra crispiness, you can return the sauced cauliflower to the air fryer for an additional 2 to 3 minutes.
  8. Plate the cauliflower immediately while hot and crispy.

Notes

To achieve the best results, avoid overcrowding the basket and cook in batches if necessary so the florets crisp rather than steam. If using frozen cauliflower, thaw it completely and pat dry to remove excess moisture before battering.
