Ingredients

  • 8 ounces feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon milk or cream
  • 1 teaspoon lemon juice
For the Crostini:
  • 1 baguette sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • to taste Salt and pepper
For the Topping:
  • 1/4 cup hot honey store-bought or homemade
  • Fresh thyme leaves Optional
  • Red pepper flakes Optional

Method
 

  1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil, sprinkle with salt and pepper.
  2. Bake for 8-10 minutes or until golden brown and crispy, watching carefully to prevent burning.
  3. In a food processor, combine feta cheese, olive oil, milk (or cream), and lemon juice. Process until smooth and creamy.
  4. Spread the whipped feta on each crostini.
  5. Drizzle generously with hot honey.
  6. Sprinkle with fresh thyme leaves and red pepper flakes, if desired.
  7. Serve immediately and enjoy!

Notes

For the creamiest whipped feta, use a high-quality block of feta in brine rather than pre-crumbled feta. Don't be afraid to adjust the milk or cream to achieve your desired consistency. If you prefer a tangier flavor, add a bit more lemon juice. For an extra layer of flavor, try rubbing a clove of garlic on the toasted baguette before topping with the whipped feta.
