Valentine's Day PB Hearts

Ingredients
  

Peanut Butter Hearts
  • 1 cup creamy peanut butter (or sunbutter for allergies)
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Pinch salt
Chocolate Coating
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil

Equipment

  • Medium Bowl
  • Microwave-safe bowl
  • Parchment Paper
  • Baking Sheet

Method
 

  1. In a medium bowl, mix the peanut butter, powdered sugar, milk, vanilla, and salt until smooth.

  2. Roll the mixture into small balls and flatten them slightly into heart shapes. Place them on a parchment-lined baking sheet.
  3. Freeze the peanut butter hearts for at least 30 minutes to firm up.
  4. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
    1 cup semi-sweet chocolate chips, 1 teaspoon coconut oil
  5. Dip each frozen peanut butter heart into the melted chocolate, coating completely.
  6. Place the dipped hearts back on the parchment paper and chill in the refrigerator for 15-20 minutes, or until the chocolate is set.
