A quick, healthy(ish!), and flavorful dessert perfect for Valentine's Day.

Ingredients
  

For the Base:
  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sweetener (like erythritol or stevia)
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
For the Filling:
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sweetener
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream (optional, for extra creaminess)
For the Topping:
  • 1/4 cup dark chocolate chips (sugar-free if desired)
  • 1 tablespoon coconut oil

Equipment

  • 8-inch Springform Pan or Pie Dish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix almond flour, cocoa powder, sweetener, and salt.

  3. Stir in melted coconut oil and vanilla extract until well combined.

  4. Press mixture into the bottom of an 8-inch springform pan or pie dish.
  5. Bake for 10-12 minutes, or until the base is set. Let it cool completely.
  6. In a large bowl, beat softened cream cheese and powdered sweetener until smooth.

  7. Stir in cocoa powder, vanilla extract, and heavy cream (if using).

  8. Spread the filling evenly over the cooled base.
  9. Melt dark chocolate chips and coconut oil in the microwave in 30-second intervals, stirring in between, until smooth.

  10. Drizzle the melted chocolate over the filling.
  11. Refrigerate for at least 2 hours to allow the dessert to set completely.
