Ingredients
  

For the Broth:
  • 2 cups Chicken Broth low sodium preferred
  • 1 tbsp Soy Sauce low sodium preferred
  • 1 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Ginger Powder or fresh ginger, minced
  • A pinch Red Pepper Flakes Optional, for heat
For the Noodles & Toppings:
  • 1 package Instant Ramen Noodles discard the seasoning packet
  • 1 Egg
  • 1/4 cup Chopped Green Onion
  • 1/4 cup Cooked Protein shredded chicken, pork, or tofu work well
  • Sriracha Optional, for serving
  • Sesame Seeds Optional, for garnish
  • Spinach handful

Method
 

  1. In a saucepan, combine chicken broth, soy sauce, rice vinegar, sesame oil, garlic powder, ginger powder, and red pepper flakes (if using).

  2. Bring the broth to a gentle simmer over medium heat. While broth heats add the Spinach directly into the saucepan. Place it on side until the following step is done..

  3. Crack the egg directly into the simmering broth. Poach gently until the white is cooked and the yolk is still runny. If you prefer a fully cooked egg, cook longer.

  4. Gently place the ramen noodles into the broth beside the Spinach. Cook according to the package directions until tender (usually about 2 minutes). Keep the spinach on side to avoid overcooking.

  5. Carefully transfer the noodles and broth to a bowl.
  6. Arrange the cooked protein, green onion, and poached egg on top of the noodles. Top it with the cooked spinach carefully.
