  • 1 English cucumber diced
  • 1 can black beans rinsed
  • 1 1/4 cups corn
  • 1 red pepper diced
  • 1 cup cherry tomatoes halved or quartered
  • 1/2 cup fresh cilantro chopped
  • 1 lime juiced
  • 1 avocado diced
  • salt to taste
  • black pepper to taste

Method
 

Instructions
  1. In a large bowl, combine the diced English cucumber, rinsed black beans, corn, diced red pepper, halved cherry tomatoes, and chopped fresh cilantro.
  2. Squeeze the juice from one fresh lime over the ingredients in the bowl.
  3. Gently stir all the ingredients together to ensure they are well combined and coated with the lime juice.
  4. Add the diced avocado to the salad.
  5. Season the salad with salt and freshly ground black pepper to your preference.
  6. Stir gently one more time to incorporate the avocado and seasonings. Serve immediately or chill for flavors to meld.

Notes

This salad is best enjoyed fresh but the flavors deepen if allowed to sit for a bit. It can be made ahead of time and stored in the refrigerator. For a different flavor profile, consider adding a drizzle of your favorite vinaigrette.
