Sweet Spicy Ramen Noodle Stir Fry

A quick, healthy, and utterly delicious meal with an explosion of flavors.

Ingredients
  

For the Noodles
  • 2 ramen noodles discard seasoning packets
  • 1 tablespoon sesame oil
For the Vegetables
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell peppers any color
  • 1/4 cup sliced green onions
For the Sweet Spicy Sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon rice vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon ginger grated

  • Large Skillet or Wok
  • Small Bowl

Method
 

  1. Boil the ramen noodles according to package directions, but slightly undercook them (about 2 minutes less than suggested). Drain well and toss with sesame oil to prevent sticking.

  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add broccoli florets, carrots, and bell peppers. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

  3. While vegetables are cooking, whisk together soy sauce, honey, sriracha, rice vinegar, minced garlic, and grated ginger in a small bowl.

  4. Pour the sweet spicy sauce over the stir-fried vegetables. Bring to a simmer and cook for 1-2 minutes, allowing the sauce to thicken slightly.
  5. Add the cooked ramen noodles to the skillet. Toss to coat the noodles and vegetables evenly with the sauce.
