Sweet Hawaiian Crockpot Chicken

Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts
Pineapple Sauce
  • 1 (20 ounce) can crushed pineapple undrained
  • 1 cup barbecue sauce
  • 1/2 cup brown sugar packed
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
Optional Garnishes
  • Chopped green onions
  • Toasted sesame seeds

Method
 

  1. Place chicken breasts in the bottom of your crockpot.
    2 lbs boneless, skinless chicken breasts
  2. In a bowl, whisk together crushed pineapple, barbecue sauce, brown sugar, soy sauce, and cornstarch until well combined.

  3. Pour the sauce over the chicken in the crockpot. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
  4. Remove the chicken from the crockpot and shred it with two forks.

  5. Return the shredded chicken to the crockpot, and stir to coat it well with the remaining sauce.

  6. Serve hot over rice, quinoa, or cauliflower rice. Garnish with chopped green onions and sesame seeds, if desired.
