  • 1/2 cup yogurt Homemade coconut yogurt recommended, but any yogurt (Greek, dairy-free) will work.
  • 2-3 tbsp baobab fruit powder
  • 1/4 tsp pure monk fruit extract

  1. Place the frozen strawberries, yogurt, baobab fruit powder, and monk fruit extract into a food processor.
  2. Turn on the food processor and allow the ingredients to blend together.
  3. Pause the food processor periodically to scrape down the sides with a spatula as needed.
  4. Continue blending and scraping. It may seem like there isn't enough liquid initially, but keep processing until a creamy whip forms.
  5. Once the strawberry whip is smooth and creamy, scoop it into serving bowls.
  6. Serve immediately, or for a firmer consistency, place the bowls in the freezer for 10-15 minutes before serving.

Notes

The sweetness of this whip depends on the ripeness of the strawberries. Baobab fruit powder adds a unique tropical tartness and is rich in Vitamin C, prebiotic fiber, magnesium, potassium, calcium, and antioxidants. This recipe is a great way to incorporate superfruits into a delicious dessert.
