Ingredients
  

For the Spritzer (per serving)
  • 3 Tbsp Strawberry Shrub
  • 1/2-3/4 cup chilled sparkling mineral water such as Topo Chico
  • 1 strawberry half for garnish
For the Strawberry Shrub
  • 1 qt fresh strawberries hulled and sliced
  • 2 cups unfiltered apple cider vinegar
  • 1 1/2 cups granulated sugar
  • 2 Tbsp sliced fresh ginger
  • 2 tsp grated lemon zest

Method
 

  1. To Make the Strawberry Shrub: In a large bowl or resealable container, combine the sliced strawberries, apple cider vinegar, granulated sugar, sliced ginger, and grated lemon zest.

  2. Stir the mixture for about 2 minutes, until the sugar is mostly dissolved.
  3. Cover the container and refrigerate it for about 2 days to allow the flavors to fully infuse.
  4. After 2 days, pour the mixture through a fine-mesh strainer into a 1-quart glass jar, pressing on the solids to extract all the liquid. Discard the strawberry and ginger solids.
  5. Secure the lid on the jar. The shrub can be stored in the refrigerator for up to 3 months.
  6. To Make One Strawberry Spritzer: Fill a tall glass with ice.
  7. Pour 3 tablespoons of the prepared Strawberry Shrub over the ice.

  8. Top with 1/2 to 3/4 cup of chilled sparkling mineral water, adjusting to your taste.

  9. Gently stir to combine. Garnish with a fresh strawberry half and serve immediately.

Notes

The strawberry shrub needs 2 days to infuse, but the active preparation time is only about 10 minutes. Once made, the shrub lasts for 3 months, providing an instant base for sophisticated drinks. For a cocktail, add a shot of tequila or gin.
