Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Cheesecake Swirl:
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
For the Strawberry Component:
  • 1 cup fresh strawberries, finely diced

Method
 

  1. **Prep:** Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. **Combine Dry Ingredients:** In a medium bowl, whisk together the flour, baking soda, and salt.

  3. **Cream Butter and Sugars:** In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. **Add Wet Ingredients:** Beat in the egg and vanilla extract until well combined.

  6. **Prepare Strawberry Component:** Finely dice the Fresh Strawberries

  7. **Make the Cheesecake Swirl:** In a small bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

  8. **Assemble the Cookies:** Drop rounded tablespoons of cookie dough onto the prepared baking sheet.
  9. **Add the Swirl:** Gently press a small indentation into the center of each cookie. Spoon or pipe a small amount of the cheesecake mixture into the center of each indentation. Garnish with the Fresh Strawberries.
