Ingredients
  

For the Cookies:
  • 1 box Strawberry Cake Mix (15.25 oz)
  • 1/2 cup vegetable oil
  • 2 large eggs
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice
  • 1 teaspoon lemon zest (optional)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the strawberry cake mix, vegetable oil, and eggs until well combined.

  3. Drop spoonfuls of the dough onto an ungreased baking sheet.
  4. Bake for 8-10 minutes, or until the edges are lightly golden.
  5. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  6. While the cookies are cooling, whisk together the powdered sugar, lemon juice, and lemon zest (if using) until smooth.

  7. Once the cookies are cool, drizzle the lemon glaze over the top.
