- In a small saucepan, combine the chopped pears, sugar, and water over medium heat.
- Simmer the mixture for approximately 10 minutes until the pears are soft and the liquid has thickened into a light syrup.
- Remove from heat and stir in the vanilla bean paste. Allow the syrup to cool completely at room temperature.
- Strain the cooled syrup through a fine-mesh sieve into a jar, pressing on the pear solids to extract all the flavor.
- In a large pitcher, combine the prepared vanilla pear syrup, chilled pear juice, and fresh lemon juice.
- Fill four glasses with ice and pour the pear mixture into each glass until half full.
- Top each glass with sparkling water, stir gently, and garnish with pear slices or thyme sprigs.
Notes
The vanilla pear syrup can be made up to one week in advance and stored in the refrigerator.
