Main Ingredients
  • 1 lb dried black-eyed peas rinsed and sorted
  • 1 lb smoked turkey legs or ham hocks
  • 1 tbsp oil or bacon drippings
  • 1 large white onion diced
  • 4 cloves garlic minced
  • 6 cups chicken broth low sodium
  • 1 tsp Cajun seasoning to taste

Equipment

  • Large Dutch Oven or Heavy Pot
  • Chef's Knife
  • Cutting Board

Method

  1. Heat the oil in a large pot over medium-high heat. Add the diced onion and cook until softened (about 5 minutes), then stir in the minced garlic for 1 minute.
1 tbsp oil or bacon drippings, 1 large white onion, 4 cloves garlic
  2. Add the smoked meat (turkey or ham hock) and the chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes to flavor the broth.
1 lb smoked turkey legs or ham hocks, 6 cups chicken broth
  3. Stir in the rinsed black-eyed peas and Cajun seasoning. Cover slightly and simmer for 1 to 1.5 hours, stirring occasionally, until the peas are tender and creamy.
1 lb dried black-eyed peas, 1 tsp Cajun seasoning
  4. Remove the meat, shred it off the bone, and return it to the pot. Serve hot with cornbread and enjoy your southern style black eyed peas recipe!

Notes

For faster cooking, you can soak the peas overnight, which reduces simmer time by about 30 minutes.
