Ingredients
  

For the Potatoes:
  • 2 lbs Yukon Gold potatoes peeled and cubed
  • 1/2 medium yellow onion sliced
  • 1/4 cup vegetable oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional
  • Salt to taste
  • Pepper to taste
For the Sausage:
  • 1 lb Southern Fried Potatoes Sausage sliced into rounds
Optional Garnishes:
  • Chopped fresh parsley
  • Green onions sliced
  • Sour cream or Greek yogurt

Method
 

  1. Peel and cube the potatoes into roughly 1-inch pieces. Slice the onion.

  2. In a large skillet over medium heat, brown the Southern Fried Potatoes Sausage slices on both sides until cooked through. Remove the sausage from the skillet and set aside.

  3. In the same skillet (using the rendered sausage fat – yum!), add the vegetable oil. Add the cubed potatoes and sliced onion. Season with paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Mix well.

  4. Cook the potatoes, stirring occasionally, until they are tender and golden brown – about 20-25 minutes. Reduce heat if necessary to prevent burning.
  5. Add the cooked sausage back into the skillet with the potatoes and onions. Mix to combine and heat through for another 2-3 minutes.

  6. Serve hot, garnished with fresh parsley, green onions, and a dollop of sour cream or Greek yogurt, if desired. Enjoy!
