Preheat your oven to 350°F (175°C).
In a large bowl, combine the strawberry cake mix, vegetable oil, and eggs.

Mix until just combined. The batter will be thick.
Drop by rounded tablespoons onto ungreased baking sheets.
Bake for 8-10 minutes, or until the edges start to turn golden.
Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
While the cookies are cooling, prepare the filling.
In a medium bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
4 oz cream cheese, 1/4 cup powdered sugar
Gently mix in the strawberry jam.

Once the cookies are completely cool, spread a spoonful of the filling on the bottom of one cookie and top with another cookie to create a sandwich.
Serve immediately or refrigerate for later. Enjoy
