Ingredients
  

  • 1 pound Italian sausage removed from casings
  • 5 medium potatoes peeled and cubed
  • 1 large onion chopped
  • 1 red bell pepper chopped
  • 2 cloves garlic minced
  • 10.75 ounce condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a skillet, brown the Italian sausage over medium heat, breaking it up with a spoon as it cooks. Drain off any excess grease.

  2. In your slow cooker, layer the cubed potatoes, chopped onion, and chopped red bell pepper.

  3. Spread the browned sausage evenly over the vegetables. Sprinkle the minced garlic over the sausage.

  4. In a separate bowl, whisk together the condensed cream of mushroom soup and milk until smooth.

  5. Pour the soup mixture over the ingredients in the slow cooker. Sprinkle with dried thyme, salt, and pepper.

  6. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes are tender.
  7. During the last 30 minutes of cooking, sprinkle the shredded cheddar cheese over the casserole.
