Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 pound andouille sausage sliced
  • 1 pound small red potatoes quartered
  • 2 ears corn each cut into 4 pieces
  • 1 red bell pepper cut into chunks
  • 1 yellow onion cut into chunks
  • 4 cloves garlic minced
  • 1/4 cup olive oil
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional
  • to taste Salt and pepper
  • Lemon wedges for serving
  • Fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss potatoes with 2 tablespoons of olive oil, salt, pepper, and 1 tablespoon of Old Bay seasoning.
  3. Spread the potatoes in a single layer on a large baking sheet. Bake for 15 minutes.
  4. Remove the sheet pan from the oven. Add the sausage, corn, bell pepper, and onion to the pan. Drizzle with remaining olive oil.
  5. Sprinkle with paprika and cayenne pepper (if using). Toss gently to coat.
  6. Return the sheet pan to the oven and bake for another 15 minutes.
  7. Add the shrimp and minced garlic to the sheet pan. Sprinkle with the remaining Old Bay seasoning.
  8. Bake for 5-7 minutes, or until the shrimp are pink and cooked through.
  9. Serve immediately with lemon wedges and chopped parsley.

Notes

For the best results, select fresh, high-quality ingredients. Don’t overcrowd the pan. Par-boiling the potatoes for 5-7 minutes before adding them to the sheet pan can help them cook more evenly. Customize the spice level by adjusting the amount of cayenne pepper or adding a pinch of red pepper flakes. Adding a splash of beer or white wine to the pan during the last few minutes of baking can also enhance the flavor. Keep a close eye on the shrimp to prevent overcooking. Serve immediately. A squeeze of fresh lemon juice at the end will brighten the flavors beautifully.
