  • 2 medium sweet potatoes peeled and sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese crumbled
  • 2 tablespoons honey
  • 1 tablespoon chopped fresh parsley (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss sweet potato rounds with olive oil, salt, and pepper. Make sure each slice is well coated.
  3. Arrange the sweet potato rounds in a single layer on a baking sheet. Avoid overlapping.
  4. Bake for 20-25 minutes, flipping halfway through, until tender and slightly caramelized. Watch carefully to avoid burning!
  5. Remove from the oven and immediately sprinkle with crumbled feta cheese.
  6. Drizzle with honey.
  7. Garnish with fresh parsley, if desired.
  8. Serve immediately and enjoy the warm, cheesy goodness.

Notes

For extra flavor, try adding a pinch of red pepper flakes before baking. Don't be afraid to experiment with different types of feta; a tangy Greek feta works beautifully. The quality of the honey matters, too. A raw, wildflower honey will add depth and complexity.
