- Preheat your oven to 400°F (200°C).
- In a large bowl, toss sweet potato rounds with olive oil, salt, and pepper. Make sure each slice is well coated.
- Arrange the sweet potato rounds in a single layer on a baking sheet. Avoid overlapping.
- Bake for 20-25 minutes, flipping halfway through, until tender and slightly caramelized. Watch carefully to avoid burning!
- Remove from the oven and immediately sprinkle with crumbled feta cheese.
- Drizzle with honey.
- Garnish with fresh parsley, if desired.
- Serve immediately and enjoy the warm, cheesy goodness.
Notes
For extra flavor, try adding a pinch of red pepper flakes before baking. Don't be afraid to experiment with different types of feta; a tangy Greek feta works beautifully. The quality of the honey matters, too. A raw, wildflower honey will add depth and complexity. If you want to take these to the next level, a quick broil for the last minute or two will get the feta bubbly and golden brown.
