Ingredients
  

Feta Cheese
  • 8 ounces feta cheese preferably block feta in brine
Roasted Garlic
  • 1 head garlic
  • 1 tablespoon olive oil
Fresh Herbs
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 tablespoon fresh oregano chopped
Other
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C). Cut off the top of the garlic head. Drizzle with 1 tablespoon olive oil, wrap in foil, and bake for 40-50 minutes, or until soft.
  2. Let the roasted garlic cool slightly.
  3. Crumble the feta cheese into a food processor.
  4. Squeeze the roasted garlic cloves into the food processor. Add the herbs, olive oil, and lemon juice.
  5. Process until smooth and creamy, scraping down the sides as needed.
  6. Season with salt and pepper to taste.
  7. Serve immediately or chill for later.
