Preheat your oven to 400°F (200°C).
In a large bowl, toss the cubed potatoes with olive oil. Ensure they are evenly coated.
2 lbs Yukon gold potatoes, 2 tablespoons olive oil
Sprinkle the Ranch seasoning mix over the potatoes. Mix well so that each piece is covered.

Spread the potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, or until tender and slightly browned, flipping halfway through.

Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the potatoes.

Return the baking sheet to the oven and bake until the cheese is melted and bubbly, about 2-3 minutes.
