- Sauté Aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and bell pepper. Sauté for 5-7 minutes until softened. Using frozen black eyed peas drastically cuts down on the preparation time, as no pre-soaking is required!
