Ingredients
  

For the Chicken:
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Honey BBQ Sauce:
  • 1/2 cup ketchup
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Pinch cayenne pepper (optional)
For the Rice:
  • 1 cup long-grain rice
  • 2 cups water or chicken broth
  • 1 tbsp butter or olive oil (optional)

Method
 

  1. Rinse the rice in a fine-mesh sieve. Combine rice and water or chicken broth in a saucepan. Bring to a boil, then reduce heat and simmer for 18-20 minutes, or until water is absorbed. Fluff with a fork; stir in butter or olive oil if desired.

  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, sprinkle with salt and pepper, and cook for 5-7 minutes, until cooked through and lightly browned.

  3. While the chicken cooks, whisk together ketchup, honey, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using) in a small bowl.

  4. Pour the honey BBQ sauce over the cooked chicken in the skillet. Stir to coat the chicken evenly. Reduce heat to low and simmer for 5-10 minutes, allowing the sauce to thicken slightly and the flavors to meld.
