- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are tender, about 5-7 minutes.2 tablespoons olive oil, 1 onion, 2 cloves garlic, 1 carrot, 1 stalk celery
- Add the rinsed and drained black eyed peas (pre-soaked), water (or broth), diced tomatoes, thyme, paprika, salt, and pepper. Stir to combine.1 cup dried black eyed peas, 2 cups water, 1 can diced tomatoes, 1 teaspoon dried thyme, 1 teaspoon paprika, Salt and pepper
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for **20-25 minutes**, or until the black eyed peas are tender. (Note: If peas were not soaked overnight, this time will need to be extended significantly).
- Taste and adjust the seasoning as needed before serving hot.
Notes
**Crucial Note:** To achieve the 20-25 minute cook time listed, the dried black eyed peas must be **soaked overnight** or pre-cooked. If using un-soaked dried peas, the simmering time will be 60-90 minutes. If using canned black eyed peas (rinsed and drained), the simmering time in step 3 can be reduced to 10-15 minutes to allow the flavors to meld.
