Ingredients
  

  • 2 sprigs fresh mint 6-in. each, plus more for garnish
  • 1/2 cup pineapple juice 4 oz.
  • 1/4 cup fresh lime juice 2 oz., from 3 limes
  • 1 Tbsp vanilla syrup 1/2 oz.
  • 1 Tbsp pineapple syrup 1/2 oz.
  • 1 large egg white
  • 1 cup ice cubes

Method
 

  1. Place the 2 sprigs of fresh mint into a cocktail shaker. Use a muddler or the handle of a wooden spoon to gently muddle the mint until it becomes fragrant.

  2. Add the pineapple juice, fresh lime juice, vanilla syrup, pineapple syrup, and the egg white to the shaker.

  3. Add the cup of ice cubes to the shaker.

  4. Secure the lid and shake the mixture vigorously for about 30 seconds, until the outside of the shaker is very cold and the drink inside is frothy and foamy.
  5. Strain the mocktail into a large coupe glass (about 8 oz.), using the strainer to hold back the ice and mint leaves.
  6. Garnish with an additional fresh sprig of mint and serve immediately.

Notes

For a vegan version, substitute the egg white with 2 tablespoons of aquafaba (the liquid from a can of chickpeas). Shaking the drink vigorously with ice is crucial to creating the signature frothy, creamy texture. If you don't have a coupe glass, a martini glass or even a rocks glass will work perfectly.
