- Place the 2 sprigs of fresh mint into a cocktail shaker. Use a muddler or the handle of a wooden spoon to gently muddle the mint until it becomes fragrant.2 sprigs fresh mint

- Add the cup of ice cubes to the shaker.1 cup ice cubes
- Secure the lid and shake the mixture vigorously for about 30 seconds, until the outside of the shaker is very cold and the drink inside is frothy and foamy.
- Strain the mocktail into a large coupe glass (about 8 oz.), using the strainer to hold back the ice and mint leaves.
- Garnish with an additional fresh sprig of mint and serve immediately.2 sprigs fresh mint
Notes
For a vegan version, substitute the egg white with 2 tablespoons of aquafaba (the liquid from a can of chickpeas). Shaking the drink vigorously with ice is crucial to creating the signature frothy, creamy texture. If you don't have a coupe glass, a martini glass or even a rocks glass will work perfectly.
