Ingredients
  

  • 2 cups fresh unpeeled ripe peach slices 12 oz., from 2 peaches, plus more for garnish
  • 4 1/2 cups water divided
  • 1/2 cup granulated sugar
  • 3/4 cup fresh lemon juice from 4 lemons

Method
 

  1. Make the peach simple syrup: In a medium saucepan, combine the peach slices, 2 cups of the water, and the granulated sugar.

  2. Bring the mixture to a gentle boil over medium heat, stirring occasionally to help the sugar dissolve.
  3. Continue to gently boil for about 10 minutes, stirring occasionally, until the peaches are very soft and tender.
  4. Remove the saucepan from the heat and let the peach syrup cool for 10 minutes.
  5. Pour the syrup through a fine-mesh strainer into a small pitcher. Use the back of a spoon to press firmly on the peach solids to extract all the flavorful liquid. Discard the leftover peach pulp.
  6. Stir the fresh lemon juice and the remaining 2 1/2 cups of water into the peach syrup in the pitcher.

  7. Serve the lemonade over ice in glasses, garnishing each with a fresh slice of peach.

Notes

For the best flavor, use ripe, in-season peaches. The peach syrup can be made up to two weeks in advance and stored in the refrigerator. For a fizzy version, replace the final 2 1/2 cups of water with chilled club soda or sparkling water.
