Notes
For the best flavor, use fresh corn when it's in season. If using frozen corn, make sure to thaw it completely and pat it dry before adding it to the dip; this will help prevent a watery consistency. Adjust the amount of jalapeño based on your preferred spice level – a little goes a long way! Don't be afraid to experiment with other vegetables too; black beans, diced avocado, or roasted red peppers are fantastic additions. If you're short on time, this dip is still delicious served immediately, but chilling it allows the flavors to truly blend. Finally, a dollop of sour cream on top adds extra creaminess and tang.
