  • 1 pound small potatoes e.g., fingerling, baby Yukon Gold
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Toppings (choose your favorites):
  • sour cream or Greek yogurt
  • shredded cheddar cheese
  • cooked bacon crumbles
  • chopped chives or green onions
  • salsa
  • Everything Bagel Seasoning

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash the small potatoes and pat them dry.
  3. In a bowl, toss the potatoes with olive oil, salt, and pepper. Ensure they are evenly coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Bake for 20-25 minutes, or until the potatoes are tender when pierced with a fork.
  6. Remove from the oven and let them cool slightly.
  7. Gently smash each potato with a fork.
  8. Add your favorite toppings and serve immediately.

Notes

Select potatoes of similar size for even cooking. Don't overcrowd the baking sheet. For extra crispy skin, broil the last few minutes (watch closely). Experiment with herbs like garlic powder, paprika, or rosemary. Set up a potato bar with various toppings for customization.
