Ingredients
  

  • 4 1/2 cups chopped cooked chicken rotisserie chicken works perfectly
  • 4 oz cream cheese softened to room temperature
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1 can Unsalted Cream of Chicken Soup 10.5-oz
  • 1/4 tsp garlic powder
  • 1/4 tsp dried onion powder
  • 1 sleeve Ritz crackers crushed
  • 5 Tbsp butter melted

Method
 

  1. Preheat your oven to 350ºF. Lightly spray a 9x9-inch baking dish with non-stick cooking spray and set it aside.
  2. In a large mixing bowl, combine the chopped chicken, softened cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and the cream of chicken soup. Stir until everything is well incorporated.
    4 1/2 cups chopped cooked chicken, 4 oz cream cheese, 1 cup cottage cheese, 1/2 cup sour cream, 1 can Unsalted Cream of Chicken Soup, 1/4 tsp garlic powder, 1/4 tsp dried onion powder
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In a separate small bowl, mix the crushed Ritz crackers with the melted butter until the crumbs are well coated.

  5. Sprinkle the cracker mixture evenly over the top of the chicken mixture.
  6. Bake the casserole uncovered for 30 to 40 minutes, or until the edges are bubbly and the cracker topping is golden brown.

Notes

Ensure your cream cheese is completely at room temperature before mixing to prevent lumps in your sauce. You can store leftovers in the refrigerator for up to 4 days or freeze the casserole for up to 3 months.
