Mexican Pizza Recipe

A quick, healthy, and flavorful Mexican Pizza Recipe that's perfect for a weeknight meal. Inspired by my grandmother's love for Italian and Mexican flavors, this customizable recipe is sure to become a family favorite.

Ingredients
  

For the Crust:
  • 2 Large flour tortillas (10-12 inch)
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Chili powder
For the Filling:
  • 1 pound Ground beef or turkey
  • 1 packet Taco seasoning (1 ounce)
  • 1/2 cup Water
  • 1 can Refried beans (16 ounces)
For the Toppings:
  • 2 cups Shredded cheddar cheese
  • 1 cup Diced tomatoes
  • 1/2 cup Diced green onions
  • 1/2 cup Black olives, sliced
  • Sour cream For serving
  • Salsa For serving
  • Jalapeños, sliced (optional) For serving

Method
 

  1. Preheat your oven to 375°F (190°C). Brush both sides of the tortillas with olive oil. Sprinkle with garlic powder and chili powder.

  2. Place the tortillas on a baking sheet and bake for 5-7 minutes, or until lightly golden and crispy. Watch them carefully to prevent burning!

  3. In a skillet, brown the ground beef/turkey over medium heat. Drain off any excess grease.

  4. Stir in the taco seasoning and water. Simmer for 5 minutes, or until the liquid is absorbed.

  5. Spread a layer of refried beans evenly over each tortilla. Top with the seasoned meat and shredded cheddar cheese.

  6. Return the pizzas to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

  7. Remove from the oven and top with diced tomatoes, green onions, and black olives.

  8. Cut into wedges and serve with sour cream, salsa, and jalapeños, if desired. Enjoy!
