  • 1.5 lbs boneless, skinless chicken breasts cooked and shredded
  • 1 oz Ranch dressing mix packet
  • 1/2 cup milk
Potato Layer
  • 32 oz frozen diced potatoes thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 tsp garlic powder
  • salt to taste
  • pepper to taste
Topping
  • 1/2 cup crushed Ritz crackers
  • 2 tablespoons melted butter

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, Ranch dressing mix, and milk. Mix well to ensure chicken is coated evenly.
  3. In a separate bowl, mix together the thawed diced potatoes, cheddar cheese, sour cream, green onions, garlic powder, salt, and pepper.
  4. Spread the potato mixture evenly across the bottom of the prepared baking dish.
  5. Carefully spread the chicken mixture over the potato layer.
  6. In a small bowl, combine the crushed Ritz crackers and melted butter.
  7. Sprinkle the Ritz cracker topping evenly over the chicken layer.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
  9. Let stand for 5-10 minutes before serving.

Notes
