Ingredients
  

For the Artichoke Base:
  • 1 can artichoke hearts 14-ounce, drained and chopped
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup grated Gruyere cheese
  • 2 cloves garlic minced
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes optional
Toppings:
  • paprika for color
  • fresh parsley chopped, for garnish
  • crusty bread slices, baguette slices, or pita chips for serving
  • vegetable crudités such as carrot and celery sticks for serving

Equipment

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the chopped artichoke hearts, mayonnaise, sour cream, Parmesan cheese, Gruyere cheese, minced garlic, black pepper, and red pepper flakes (if using).
  3. Mix well until all ingredients are evenly incorporated.
  4. Spread the mixture into a small baking dish or oven-safe skillet.
  5. Sprinkle with paprika.
  6. Bake for 20-25 minutes, or until the dip is bubbly and golden brown around the edges.
  7. Garnish with fresh parsley and serve hot with your favorite dippers.

Notes

For a creamier dip, use an electric mixer but don't over-mix. Can substitute light mayonnaise and sour cream for lower calories. Use other cheeses if Gruyere or Parmesan aren't available. Can be prepared ahead and refrigerated before baking. Serve with bread, chips, or vegetable sticks.
