Peel and cube the sweet potatoes into bite-sized pieces.

Heat olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned. Remove sausage from the skillet and set aside.

Add the minced garlic to the skillet and cook for 1 minute until fragrant. Stir in the honey, soy sauce, and apple cider vinegar (and red pepper flakes, if using).

Return the cooked sausage to the skillet with the sweet potatoes. Stir to combine and simmer for 5-7 minutes, allowing the sauce to thicken slightly and coat everything evenly.
