Cut chicken thighs into bite-sized pieces.

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove from skillet and set aside.

In a small bowl, whisk together cornstarch and water until smooth. Pour into the skillet and stir constantly until the sauce thickens.

Return the cooked chicken to the skillet and toss to coat evenly with the honey garlic sauce.
