- Slice the chicken into very thin strips with a very sharp knife.
- Thread the chicken strips accordion-style onto the soaked wooden skewers. Aim for about 4 ounces of chicken per skewer.
- In a small bowl, whisk together the honey, tomato paste, apple cider vinegar, chipotle chili powder, chopped garlic, and optional salt to create the sauce.
- Spoon about half of the sauce evenly over the skewers. Reserve the remaining sauce for basting.
- Preheat your grill to high heat. Place the skewers on the hot grill.
- Grill for 10-12 minutes, or until the chicken is fully cooked. Baste the skewers with the reserved sauce and turn them every 2-3 minutes to ensure even cooking and caramelization.
- Remove from grill and let rest for a few minutes before serving.
Notes
If grilling is not an option, preheat your oven to 400°F (200°C). Arrange skewers on a baking sheet and bake for 16-18 minutes, rotating and basting every 5-6 minutes. For a crispier finish, you can broil for 1-2 minutes at the end, watching carefully to prevent burning.
