  • 32 ounces boneless and skinless chicken breasts sliced into very thin strips
  • 1/2 cup honey raw preferred
  • 2 tablespoons tomato paste
  • 4 tablespoons apple cider vinegar
  • 2 teaspoons chipotle chili powder
  • 1 clove garlic very finely chopped
  • 1/2 teaspoon salt optional
  • 8 wooden skewers soaked in water

Method
 

Instructions
  1. Slice the chicken into very thin strips with a very sharp knife.
  2. Thread the chicken strips accordion-style onto the soaked wooden skewers. Aim for about 4 ounces of chicken per skewer.
  3. In a small bowl, whisk together the honey, tomato paste, apple cider vinegar, chipotle chili powder, chopped garlic, and optional salt to create the sauce.
  4. Spoon about half of the sauce evenly over the skewers. Reserve the remaining sauce for basting.
  5. Preheat your grill to high heat. Place the skewers on the hot grill.
  6. Grill for 10-12 minutes, or until the chicken is fully cooked. Baste the skewers with the reserved sauce and turn them every 2-3 minutes to ensure even cooking and caramelization.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

If grilling is not an option, preheat your oven to 400°F (200°C). Arrange skewers on a baking sheet and bake for 16-18 minutes, rotating and basting every 5-6 minutes. For a crispier finish, you can broil for 1-2 minutes at the end, watching carefully to prevent burning.
