- In a small saucepan, combine the water, cinnamon stick, crushed cardamom pods, cloves, star anise, ginger, and nutmeg.
- Bring the mixture to a gentle boil over medium heat, then reduce heat and simmer for 5 to 7 minutes to allow the spices to infuse the water.
- Add the black tea bags or loose leaf tea to the spiced water and let it steep for 3 to 5 minutes depending on your preferred strength.
- Remove the tea bags and stir in the maple syrup and milk of your choice.
- Heat the mixture through until steaming, but be careful not to let it reach a rolling boil to avoid scorching the milk.
- Strain the latte through a fine-mesh sieve into two mugs to remove the whole spices and ginger slices.
- Top with a dollop of whipped cream and a sprinkle of cinnamon before serving warm.
Notes
For a richer flavor, use a 1:1 ratio of water to milk. You can also add a drop of vanilla extract for extra holiday warmth.
