Preheat your oven to 375°F (190°C).
In a large skillet, brown Hobo Casserole Ground Beef over medium-high heat. Drain any excess grease.

Add the chopped onion and green bell pepper to the skillet. Cook until softened, about 5 minutes.

Stir in the diced tomatoes, corn, green beans, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.

While the beef simmers, boil the potatoes until tender, about 15-20 minutes. Drain well.
6 medium potatoes
Return the potatoes to the pot. Add the milk, and butter. Mash until smooth and creamy. Season with salt and pepper to taste.

Spread the ground beef mixture evenly into a 9x13 inch baking dish.
Spoon the mashed potatoes evenly over the ground beef mixture.
If desired Sprinkle with shredded cheddar cheese on top of the mashed potatoes.

Bake uncovered in the preheated oven for 20-25 minutes, or until the topping is lightly golden brown and the casserole is bubbly.
