Hobo Casserole Ground Beef

Ingredients
  

For the Ground Beef Mixture:
  • 1 pound Hobo Casserole Ground Beef (or your favorite ground beef)
  • 1 medium onion chopped
  • 1 medium green bell pepper chopped
  • 14.5 ounce can diced tomatoes undrained
  • 15 ounce can corn drained
  • 15 ounce can green beans drained
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Topping:
  • 6 medium potatoes peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt to taste
  • pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown Hobo Casserole Ground Beef over medium-high heat. Drain any excess grease.

  3. Add the chopped onion and green bell pepper to the skillet. Cook until softened, about 5 minutes.

  4. Stir in the diced tomatoes, corn, green beans, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.

  5. While the beef simmers, boil the potatoes until tender, about 15-20 minutes. Drain well.

  6. Return the potatoes to the pot. Add the milk, and butter. Mash until smooth and creamy. Season with salt and pepper to taste.

  7. Spread the ground beef mixture evenly into a 9x13 inch baking dish.
  8. Spoon the mashed potatoes evenly over the ground beef mixture.
  9. If desired Sprinkle with shredded cheddar cheese on top of the mashed potatoes.

  10. Bake uncovered in the preheated oven for 20-25 minutes, or until the topping is lightly golden brown and the casserole is bubbly.
  11. Let stand for a few minutes before serving. Enjoy!
