- Lay tortillas on a clean flat surface.
- On each tortilla, layer approximately 1/2 cup of chopped chicken, 1 tablespoon of ranch dressing, 2 tablespoons of shredded mozzarella cheese, and 1 tablespoon of minced cilantro (if using).
- Fold each tortilla tightly to form a burrito shape.
- Heat a heavy-duty pan or grill pan over medium heat. Lightly coat with cooking spray or oil.
- Place the wraps seam-side down in the hot pan. Cook for 1-2 minutes per side, or until the tortilla is crispy and golden brown, and the cheese is melted.
- Remove the wraps from the pan, slice in half, and serve immediately.
Notes
For the chicken: You can use cooked rotisserie chicken, leftover chicken, or grilled chicken seasoned with your favorite spices. If grilling fresh chicken, season with a tablespoon of fajita seasoning and grill in a hot pan for 5-6 minutes per side until cooked through. Add diced avocado, tomatoes, or lettuce for extra flavor and nutrients.
