- Cook the whole wheat pasta according to package directions until al dente. Drain and rinse with cold water.
- While the pasta is cooking, prepare the dressing. In a small bowl, whisk together olive oil, lime juice, Dijon mustard, minced garlic, salt, and pepper.
- In a large bowl, combine the cooked and cooled pasta, cooked chicken, diced avocado, halved cherry tomatoes, chopped red onion, diced cucumber, and chopped cilantro.
- Pour the prepared dressing over the pasta salad ingredients.
- Gently toss everything together until well combined and the ingredients are evenly coated with the dressing.
- Taste and adjust seasoning with salt and pepper if needed. Serve immediately or chill for later.
Notes
For a spicier kick, add a pinch of red pepper flakes to the dressing. You can also add other vegetables like bell peppers or corn.
