  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 can black beans (15 ounces), rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup salsa
  • 1 avocado diced
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • Optional toppings: sour cream, Greek yogurt, cilantro, lime wedges

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and break it apart with a spoon. Cook until browned.

  2. Drain off any excess grease. Add chopped onion and minced garlic to the skillet. Cook until softened, about 3-5 minutes.
