  • 1.5 lbs Yukon Gold potatoes cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
For the Garlic Parmesan Sauce
  • 4 tablespoons butter melted
  • 4 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken and potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread the chicken and potatoes in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until chicken is cooked through and potatoes are tender.
  5. While the chicken and potatoes are roasting, prepare the sauce. In a small bowl, whisk together melted butter, minced garlic, Parmesan cheese, parsley, lemon juice, and red pepper flakes (if using).
  6. Once the chicken and potatoes are done, drizzle the garlic parmesan sauce over them.
  7. Serve immediately and enjoy!
