- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart. Flatten each cookie slightly with the bottom of a glass or your hand.
- Bake for 10-12 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth. Gradually beat in the sifted powdered sugar and vanilla extract until the frosting is light and fluffy.
- Once the cookies are completely cool, spread a generous layer of cream cheese frosting over the top of each cookie, creating a "pizza" base.
- Arrange the fresh fruit decoratively over the frosting to create a colorful fruit pizza topping. Slice or dice the fruit as needed for easy eating.
- Chill the fruit pizza cookies for at least 30 minutes before serving to allow the frosting to set.
Notes
For best results, use fresh, ripe fruit. Store leftover fruit pizza cookies in an airtight container in the refrigerator for up to 2 days.
