Ingredients
  

For the Filling:
  • 4 ounces goat cheese softened
  • 0.25 cup fig jam or preserves
  • 1 tablespoon honey
  • 0.25 teaspoon black pepper
For the Pinwheels:
  • 1 sheet puff pastry about 14 ounces, thawed
  • 1 large egg beaten, for egg wash
  • fresh thyme leaves optional, for garnish

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the goat cheese, fig jam, honey, and black pepper. Mix well until thoroughly combined.
  3. Unfold the thawed puff pastry sheet on a lightly floured surface.
  4. Spread the fig and goat cheese mixture evenly over the puff pastry, leaving a small border at the edges.
  5. Starting from one long side, tightly roll the puff pastry into a log.
  6. Slice the log into 1/2-inch thick pinwheels.
  7. Place the pinwheels on the prepared baking sheet, spacing them about 1 inch apart.
  8. Brush the tops of the pinwheels with the beaten egg wash.
  9. Bake for 12-15 minutes, or until golden brown and puffed.
  10. Let cool slightly on the baking sheet before serving. Garnish with fresh thyme leaves, if desired.

Notes

Ensure puff pastry is properly thawed but still cold. Use a thin, even layer of filling to prevent leaking. Roll tightly for well-defined pinwheels. Watch carefully while baking. Experiment with different fig jams or add a sprinkle of sea salt. Serve warm with balsamic glaze or honey mustard for dipping.
