- Place chicken breasts in the bottom of your slow cooker. Add the drained and rinsed black beans, drained corn, undrained Rotel diced tomatoes and green chilies, onion powder, ranch dressing seasoning, and black pepper.
- Squeeze the fresh lime juice over the ingredients in the slow cooker. Pour the chicken broth over everything and place the block of cream cheese on top.
- Cover the slow cooker and cook on HIGH for 3-4 hours or on LOW for 5-6 hours, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the chicken breasts from the slow cooker and place them on a cutting board. Using two forks, shred the chicken.
- Return the shredded chicken to the slow cooker. Stir everything together until the cream cheese has melted and coats the chicken and other ingredients.

Notes
This recipe can be easily doubled or tripled for larger gatherings or for freezing. For less spice, use mild Rotel or plain diced tomatoes. Ensure chicken is cooked through (no pink) or reaches an internal temperature of 165°F (74°C). Lining or spraying the slow cooker can help with cleanup.
